Meet Our Team

Jacqui Dauphinais

Growing up on Cape Cod, Massachusetts, Jacqui Dauphinais moved to New York City to pursue a degree in International Relations at the College of Mount Saint Vincent. Shortly after graduating, Jacqui began working at the Bronx Zoo on the monorail as a tour guide & driver through the Asia section of the Zoo. Working her way up through the ranks at both Bronx & Central Park Zoos in the Guest Services & eventually the Events & Hospitality Department, she helped build & expand the Events & Hospitality program over 9 years of work with the Zoos. From catering, to event coordination, to sales, she’s done it all & will help make your event a success!

Jacqui has been known to frequent the Islands Exhibit to catch a glimpse of her favorite Zoo resident, Segundo, a orangutan. In her spare time she enjoys writing about herself in the 3rd person, exploring various cultural attractions, & playing on various team sports.

Morgan Rost

Morgan grew up in the small town of Floyds Knobs, Indiana. She attended Ball State University, originally majoring in Journalism.  She transferred to IU Southeast and graduated with an Indiana University Bachelor’s Degree in Communications and Advertising.

Morgan began her hospitality and events career with the local gem of Joe Huber’s as an Event Coordinator in 2011. After a year of coordinating weddings, corporate events and off-site events, Morgan jumped at the opportunity and accepted a position as the Catering Operations Manager at the Louisville Zoo in 2012.

After spending the last 2 years being a Catering Operations Manager, the beginning months of 2015 were off to a great start as she was promoted to Catering Director and then a short time thereafter, was promoted to Sales Coordinator.

You can find her in her office, walking through the zoo meeting new people, or visiting with Oliver the Giraffe (shh, he’s her favorite, don’t tell!). In her spare time, she enjoys hiking, reading, and spending time with her Border Collie, Murphy.

Maddie Hoekstra

Maddie started at the Louisville Zoo in 2011 as a cashier and was quickly promoted to Unit Controller/Human Resource Manager and accepted the position of Catering Operations Manager in 2016.

She was born and raised in Louisville, KY. Maddie enjoys the outdoors. In her spare time you will find her camping, hiking, fishing, or kayaking. Maddie has visited many of Kentucky’s State Parks and is a supporter of Kentucky Tourism. Maddie’s favorite animal at the Louisville Zoo are Otis and Rita, the grizzly bears.

Amy Hilton

Starting out at the Cincinnati Zoo, nearly 12 years ago, Amy has worked her way up through the concessions, catering and financial departments.  After an opportunity presented itself to in 2007, Amy decided to leave her hometown of Cincinnati, OH and move to Louisville, KY to work at the Louisville Zoo and then shortly after accepted the Unit Controller position at the Houston Zoo.  Gaining a wealth of knowledge and experience in Texas but also having a desire to be a little bit closer to home, she moved back to Louisville in 2010 and recently transitioned into the Events & Hospitality Department!

Amy has always thoroughly enjoyed being able to look out her window and seeing the Zebras romping around but she is most excited about the new Penguin Cove exhibit that is due to open Spring of 2016!  In her free time she loves to attend and sing loudly at concerts, game nights, and spending as much time with her nephew, Ben.

John Bird

Executive Chef, John Bird, joined the Louisville Zoo team in the fall of 2013, after spending 8 years working in food service in Zoos. Most recently as the Executive Chef and Culinary Operations Manager at the Fort Wayne Children’s Zoo, and Executive Sous Chef at the Cincinnati Zoo.

John, a Cincinnati native, attended the Midwest Culinary Institute and has successfully held Chef and Management positions in amusement and cultural attraction dining, country clubs, corporate dining, and local fine dining establishments.

At the Louisville Zoo, Johns focus is to raise the bar of what guest’s perceptions of food quality at cultural attractions in both the daily concessions and catering events. Chef John takes pride in utilizing fresh and local ingredients creating a family dining experience that offers wholesome choices for children while satisfying adult palates with inventive and playful riffs off classic American fair.

Sean Paschall

Sean Paschall, a native of Hudson Valley New York, attended the Culinary Institute of America after completing his Culinary Arts Certification from Boces Career and Technical Institute. After leaving the CIA he spent time at a #1 Zagat rated restaurant in Windham New York.

Sean has a vast history in restaurant management spanning from French fine dining locations, large scale catering, and most recently in corporate dining at Stoney River Legendary Steaks. Sean joined the Louisville Zoo team in late summer of 2015 and looks forward to utilizing his fine dining background to reimagine what guests can expect in our concessions as well as catering and special events.
